Thermal irreversibility: When its water suspension is heated to above approximately 80°C and then cooled, a strong gel can be formed. This gel can maintain its original form without collapsing or melting during subsequent heat treatments such as steaming, boiling, frying and baking.
Adjustable gel strength: By adjusting the addition concentration, various gel textures ranging from soft and elastic to hard, brittle and tough can be obtained, achieving the "customizable" texture of the product.
Outstanding stability: The gel is resistant to acids, salts, and freeze-thaw cycles, with extremely high stability and is less likely to release water or undergo texture deterioration. It has extended the shelf life of the product and broadened its application scope in frozen foods, acidic seasoned foods, etc.
