Dual Gel Forms
Low-set gel: Formed by heating a curdlan gum solution to 55-65°C and then cooling it. This gel is thermally reversible, has a soft texture, and is similar to gelatin.
High-set gel: Formed by heating a curdlan gum suspension to above 80°C (usually requiring several minutes of continuous heating) and then cooling it. This is its primary functional form; it is a thermally irreversible gel with a firm texture.
