Curdlan gum is a new type of extracellular polysaccharide of microorganisms. It can form a gel under heating conditions, so it is also called a thermal gel. Curdlan gum is a colorless and odorless white powder with a linear molecular structure. It is a water-insoluble glucan composed of 400 to 500 glucan residues and belongs to food fiber. It can be suspended in water and adsorb more than 30 times the amount of water. Its structure is easily affected by heating temperature, curdlan concentration, pH value, and sugar, salt and starch.  At the same heating temperature, the higher the concentration of konjac, the greater the strength of its colloid. When the pH value is within the range of 2 to 10, its gel structure is relatively stable. Starch will increase the hardness of curdlan, while sugar and salt will reduce the strength of the gel.

Curdlan gum can be further classified into low-degree colloid, medium-degree colloid and high-degree colloid based on its gel properties. The key to the distinction lies in the control of temperature. The colloid strength of konjac gum increases with the rise of heating temperature. Generally, in the food industry, curdlan gum is used in the form of high-degree colloid.

The advantageous properties of curdlan gum as a food additive  

Thermoforming gel property:  although curdlan gum is insoluble in water, it swells in water and thus disperses easily in cold water. By using the high-speed stirring treatment method, we obtain a more uniform dispersion. When heated, it forms a gel. The classification of low-degree colloids and high-degree colloids is determined by their properties.  The method of its generation is that when the water dispersion of curdlan gum is heated to 55-65 ℃ and then cooled to below 40℃, a thermally reversible low-degree gel will be formed.  When the water dispersion of curdlan gum is heated above 80℃, it will form a highly irreversibly heated gel, and the strength of the gel is mutually reinforcing with the heating temperature.  In the food industry, the application form of curdlan gum is highly colloidal.

Thermal stability: curdlan gum has strong stability during heating, so we can take advantage of its properties to apply it in food processing and the cooking of daily diets.

Freezing resistance: due to the colloid structure of curdlan gum not being affected by freeze-thaw, when applied in frozen foods, it can perfectly maintain the structure and taste of the food.

Research on the application of curdlan gum in various foods  

Curdlan gum has a wide range of applications in the food industry, typically used as a stabilizer, coagulant, thickener, water-holding agent, film-forming agent, adhesive and other food improvers in meat processing, flour products, aquatic products, pre-prepared products, etc.  When applied in the processing of meat products, the concentration can reduce moisture by 0.1 to 1%, minimize losses, improve taste, decrease fat, and enhance thawing stability.  It can be used as a substitute for protein powder in aquatic products to improve taste, increase output and reduce costs.  Next, let's take a look at some specific research results.

Research on the application of curdlan gum in meat products  

In meat products, when curdlan gum is used as a thickener, we can take advantage of its gel-like properties and add it to meat products such as sausages, smoked sausages, and braised meat products. After meeting the production requirements, adding an appropriate amount of curdlan gum can bring about a qualitative leap in the taste, appearance, and storage time of the products, thereby significantly increasing sales and minimizing production costs as much as possible.

Application of curdlan gum in rice and flour products  

After adding curdlan gum to various flour-based foods, the probability of the flour-based products becoming overcooked, sticky and cloudy can be reduced. At the same time, it can improve the toughness and softness of the flour-based products, and also enhance the elasticity and chewiness of the flour-based products after heating and boiling. Ultimately, it can achieve the effect of improving the texture, appearance and taste of the food.

Research on the application of curdlan gum in aquatic products processing  

In surimi products, the temperature at which the surimi protein we need undergoes gel deterioration and gelation is relatively consistent with the temperature required for the low-temperature and high-temperature gels obtained by heating the curdlan glue dispersion. Therefore, they can not only strengthen the network structure but also improve the gel strength.  Moreover, under the condition of ensuring no harmful effects on the human body, the method we use to reduce the production costs of enterprises and improve product quality is to replace part of the surimi raw materials with curdlan gum.

In normal surimi products, due to the degradation of endogenous enzymes and the decline in the water-forming capacity of proteins, problems such as short shelf life, water loss of the products, collapse of the body cavities, and yellowing during long-term freezing storage may occur. However, the addition of curdlan gum can improve these issues, enhance the chewiness and texture of the products, and increase the moisture content of the gel.

Research on the application of curdlan gum in other foods  

In biomimetic foods, we can take advantage of the special gel properties of curdlan gum that remain stable at high temperatures, combined with the application of auxiliary materials and appropriate temperature and concentration adjustments, to achieve the best effect on its brittleness and toughness. At the same time, it can prevent water loss, improve its structure and optimize the product appearance, thereby achieving a simulated effect in both appearance and taste.

In prefabricated products, it can minimize water loss during the heating process, making the texture soft and juicy, maintaining a fresh appearance, and enhancing thawing, freezing and thermal stability.  In flour-based foods, due to the unique physical and chemical properties of curdlan gum: it can maintain its consistency at high temperatures, it can be used as a stabilizer to enhance the thermal stability of food and achieve the desired effect.  When applied at a concentration of 0.2% to 1%, it can reduce water loss, increase yield, cut costs, and improve taste and substrate.
