Gel - forming Ability
Forms thermo - irreversible gels in an alkaline environment (pH ≥ 11) with calcium ions. Gel strength can reach 800 - 1200 g/cm².
Water - holding Capacity
Can absorb up to 100 times its own weight of water, which helps in maintaining moisture in products.
Emulsifying and Foaming Properties
Reduces the oil - water interfacial tension to about 15 m N/m, and can enhance foam stability. For example, a 0.2% addition can extend the foam half - life to 120 minutes.
