Outstanding Gelation Performance:The most remarkable feature of food-grade gellan gum is its superior gelling capability. It forms stable gels at extremely low concentrations (0.2%-0.5%), with usage levels only one-third that of agar and one-fifth that of carrageenan, significantly reducing production costs. The gel demonstrates excellent thermal stability, maintaining structural integrity below 80°C, meeting the requirements of pasteurization and other heat treatment processes.
Excellent Stability : Maintains stability in acidic environments (pH 3.5-7.0), showing exceptional compatibility with acidic foods such as fruit juices and yogurt. It also demonstrates good resistance to enzymatic degradation, extending product shelf life.
