Nourisi Pectin is a natural polysaccharide found in fruits and vegetables, widely used in various food and pharmaceutical applications due to its unique gelling, thickening, and stabilizing properties.
Properties
· Solubility: It has good solubility in hot water and optimal solubility in acidic conditions ( pH 3-4).
· Gelation: Pectin is capable of forming gels through a reaction with sugars and acids. Gelation is influenced by pH, sugar concentration and type of ions (such as calcium).
· Acid-base Sensitivity: Pectin is sensitive to pH and stable in acid conditions.
· Thermal Stability: Pectin is relatively stable at high temperature.
